Ingredients
  

  • 500 g steam or roasted sweet potato Cut into mouth size chunks
  • ¼ cup walnuts Lightly chop in a food processor
  • 1 tbsp lemon oil
  • ¼ cup sherry
  • 3 tbsp ginger marmalade
  • fresh black pepper and salt

Instructions
 

  • In saucepan add lemon oil, sherry, ginger marmalade and season with fresh black pepper and salt
  • Stir to combine. Cook over  low heat until sauce slightly thickens
  • Pour over warm sweet potatoes and gently toss to combine
  • Sprinkle with chopped walnuts
