Sweet potato roti
Ingredients
- 700 g sweet potato peeled and coarsely grated
- 1 small red onion grated
- 2 cloves garlic crushed
- 3 tbsp lemon oil
- 4 tbsp plan four
- ¼ tbsp smoke paprika
- salt and pepper
- 1 large egg
- 3 tbsp peanut oil
Instructions
- In a pan add one small grated red onion and two crushed cloves of garlic with lemon oil. Cook gently 6mins until onions are softened
- Cool
- Add onion mix to sweet potatoes and toss to combine
- Add plan flour,smoke paprika, salt and pepper
- Stir
- Fold in one large egg, beaten
- In a large pan heat a few tbsp peanut oil and heat over medium heat. Place heaped tbsp of mix into the pan and fry until cooked crispy
