Sweet potato roti

Ingredients
  

  • 700 g sweet potato peeled and coarsely grated
  • 1 small red onion grated
  • 2 cloves garlic crushed
  • 3 tbsp lemon oil
  • 4 tbsp plan four
  • ¼ tbsp smoke paprika
  • salt and pepper
  • 1 large egg
  • 3 tbsp peanut oil

Instructions
 

  • In a pan add one small grated red onion and two crushed cloves of garlic with lemon oil.  Cook gently 6mins until onions are softened
  • Cool
  • Add onion mix to sweet potatoes and toss to combine
  • Add plan flour,smoke paprika, salt and pepper
  • Stir
  • Fold in one large egg, beaten
  • In a large pan heat a few tbsp peanut oil and heat over medium heat.  Place heaped tbsp of mix into the pan and fry until cooked crispy
