Onion and bay leaf sauce

Ingredients
  

  • 50 g butter
  • 225 g onions chopped
  • ¼ cup plain four
  • 250 ml whole milk
  • 1 tbsp parsley chopped
  • 2 tbsp dijon mustard
  • 2 fresh bay leaves
  • salt and black pepper

Instructions
 

  • Over a low temperature melt butter and cook onions until soft. Do not brown
  • Stir in flour and cook for two minutes
  • Slowly add 1 cup of milk  and stir until sauce is thick
  • Stir in mustard
  • Slowly add remaining milk
  • Add Bay leaves, salt and black peppers
  • Cook over low heat for 10-15mins. Stir in parsley
  • This can be used as a sauce for boiled potatoes, cauliflower bake,  fish, chicken, pork.
    Hint: par-boil cauliflower, drain. Place in oiled dish. Pour over onion sauce. Top with grated cheese. Cook in moderate oven for 20mins. 
    Hint: Add a small can of tuna drained. Serve with cooked pasta. Top with grated parmesan cheese.
    Hint:  Add one quarter cup of cream, a handful of sliced mushrooms, one cup of shredded cooked chicken. Over low heat cook for 2 mins. Serve with hot rice.
