Spring onion and coriander cheese pancakes

Ingredients
  

  • 250 g ricotta cheese
  • 1 egg
  • ½ cup S.R flour
  • 1 tbsp grated parmesan cheese
  • ½ cup milk
  • 2 tbsp chopped coriander
  • 1 bunch of springs onions
  • salt and pepper
  • 1 tbsp butter

Instructions
 

  • In a large bowl whisk ricotta cheese until smooth
  • Blend in one beaten egg
  • Add S.R. flour and whisk until smooth
  • Add parmesan cheese
  • Blend in half a cup of milk, Whisk until smooth
  • Fold in coriander and spring onions, season with salt and black pepper
  • Place butter in a lightly oiled pan, Cook to brown on both sides
  • Suitable for freezing
