Lemon and herb rice pilaf

Ingredients
  

  • 1 tbs olive oil
  • 1 tbs butter
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 cup rice
  • ½ lemon juice
  • ½ lemon rind
  • ½ chicken or vegetable stock
  • ½ tsp dried basil
  • ½ tsp dried dill
  • ½ tsp dried thyme
  • salt and pepper
  • 2 tbs parmesan cheese

Instructions
 

  • Place pan with lid on low heat
  • Add olive oil and butter
  • Add onion chopped, garlic minced. Cook 2mins
  • Add rice. Sauté 3-4mins
  • Add lemon juice, rind of half lemon, chicken or vegetable stock, dried basil dried dill, dried thyme.  Season with salt and pepper
  • Place lid on pan. Cook for 15-20mins until all liquid is absorbed.
  • Stir in parmesan cheese
  • Place lid on pan and stand for 3mins
