Tomato and capsicum rice pilaf

Ingredients
  

  • 1 tbs olive oil
  • 1 small chopped onion
  • 2 cloves garlic minced
  • ¼ cup red capsicum
  • ¼ cup green capsicum
  • 1 cup rice
  • 1 cup chopped tomatoes
  • 2 cup vegetable or chicken stock
  • 1 tsp thyme
  • 1 tsp oregano
  • salt and pepper

Instructions
 

  • Place pan with lid on low heat
  • Add olive oil, small onion, garlic minced, red capsicum and green capsicum
  • Sauté for 2-3mins
  • Add one cup of rice and stir to mix
  • Cook 2-3mins
  • Add chopped tomatoes
  • Add vegetable or chicken stock
  • Add thyme and oregano. Season with salt and pepper
  • Put life on pan and cook for 15-20mins over low heat until water is absorbed
  • Gently fork through. Return lid to pan and let stand for 5mins
