Cauliflower curry

Ingredients
  

  • 2 tbs oil
  • 1 apple, peeled and diced
  • 2 rashers of bacon, chopped
  • 1 large onion, diced
  • 1 stick celery, finely slice
  • 1 tsp curry powder
  • ½ tsp turmeric
  • 2 tbs plain flour
  • 1 tbs cream or yoghurt
  • salt and pepper to taste
  • 2 cup chicken or vegetable stock
  • 1 cauliflower , broken in pieces and cooked
  • 2 cup cooked rice

Instructions
 

  • Heat oil in pan over low heat
  • Add bacon, onion and celery. Cook 1 min
  • Add spices and flour. Gradually add in stock, cook until sauce thicken
  • Add seasoning
  • Stir in cream or yoghurt
  • On a serving place warm rice. Top with warm cauliflower
  • Pour sauce over cauliflower and rice
