Turnip and apple soup

Ingredients
  

  • 3 medium turnips, peeled and diced
  • 1 medium potato, peeled and diced
  • 1 apple, peeled and diced
  • 1 stick celery, sliced
  • 1 large onion, diced
  • 1 tbsp grated ginger
  • 1 tbsp garlic, crushed
  • ½ tbsp curry powder
  • 4-5 cups chicken stock
  • salt and pepper to taste
  • 1 tbsp butter

Instructions
 

  • In a large saucepan over low heat, melt butter.
  • Add onion and celery, garlic, curry powder and ginger.
  • Cook 1 min.
  • Add turnip and potato and apple.
  • Cook 2 mins.
  • Add stock and seasonings.
  • Cook 20 mins.
  • Allow to cool for 5 mins.
  • Strain off half a cup of stock sandpit aside.
  • Puree soup.
  • Stir in the reserved stock.
