Turnip and tarragon soup

Ingredients
  

  • 4 medium turnips, peeled and chopped
  • 1 large onion, diced
  • 1 medium potato, peeled and diced
  • 1 stick celery, chopped
  • ½ tbsp dried tarragon
  • 4 cups chicken stock
  • 1 tbsp cream
  • salt and pepper to taste
  • 1 tbsp olive oil

Instructions
 

  • In a large saucepan, heat oil over low heat.
  • Add onion and celery.
  • Cook 1 min.
  • Add vegetables.
  • Cook 2mins.
  • Add stock.
  • Add tarragon and seasonings.
  • Cook 20mins.
  • Strain off 1/2 cup stock.
  • Puree soup.
  • Stir in reserved soup stock and cream.
  • Adjust seasonings.
