Tomato and capsicum rice pilaf
Ingredients
- 1 tbs olive oil
- 1 small chopped onion
- 2 cloves garlic minced
- ¼ cup red capsicum
- ¼ cup green capsicum
- 1 cup rice
- 1 cup chopped tomatoes
- 2 cup vegetable or chicken stock
- 1 tsp thyme
- 1 tsp oregano
- salt and pepper
Instructions
- Place pan with lid on low heat
- Add olive oil, small onion, garlic minced, red capsicum and green capsicum
- Sauté for 2-3mins
- Add one cup of rice and stir to mix
- Cook 2-3mins
- Add chopped tomatoes
- Add vegetable or chicken stock
- Add thyme and oregano. Season with salt and pepper
- Put life on pan and cook for 15-20mins over low heat until water is absorbed
- Gently fork through. Return lid to pan and let stand for 5mins
