Lemon and herb rice pilaf
Ingredients
- 1 tbs olive oil
- 1 tbs butter
- 1 large onion chopped
- 2 cloves garlic minced
- 1 cup rice
- ½ lemon juice
- ½ lemon rind
- ½ chicken or vegetable stock
- ½ tsp dried basil
- ½ tsp dried dill
- ½ tsp dried thyme
- salt and pepper
- 2 tbs parmesan cheese
Instructions
- Place pan with lid on low heat
- Add olive oil and butter
- Add onion chopped, garlic minced. Cook 2mins
- Add rice. Sauté 3-4mins
- Add lemon juice, rind of half lemon, chicken or vegetable stock, dried basil dried dill, dried thyme. Season with salt and pepper
- Place lid on pan. Cook for 15-20mins until all liquid is absorbed.
- Stir in parmesan cheese
- Place lid on pan and stand for 3mins
