Curried egg and potato salad

Ingredients
  

  • 4 large potatoes
  • 1 cup mayo
  • 1 tsp curry powder
  • salt and pepper
  • 1 red onion diced
  • ½ cup thinly slice celery
  • 2 tbs grated carrot
  • 4 hard boiled eggs

Instructions
 

  • potatoes, peeled and placed in boiling water until tender
  • Drain, cool and chop into bite size pieces
  • Place in a bowl and pour over, 1/3rd cup french dressing. cover and chill
  • In a bowl blend together, mayo, curry powder, salt, pepper.  Add onion diced, thinly slice celery, grated carrot
  • Fold in,  potatoes. Gently fold in four hard boil eggs, chopped
  • Let stand for one hour.   Serve on lettuce leaves
