Seafood and egg bake
Ingredients
- 5 duck eggs
- 2 tbs water
- 1 tsp dill
- salt and pepper
- 1 cup crab or lobster pieces
- ½ prawns
- 210 g can pink salmon drained and flaked
- 1 large onion sliced
- ½ green capsicum diced
- 2 tbs olive oil
- 2 tbs parmesan cheese
- 1 tsp lemon or lime juice
Instructions
- Fry onions and green pepper in hot oil in frypan
- Remove half and reserve
- Pour egg mix over onion and capsicum
- When almost set, add salmon, reserved onions and capsicum, crab meat, lemon juice and prawns
- Sprinkle with parmesan cheese. Cook through for 1-2mins
