Egg and cheese topping

For Vegetable, Seafood or Minced Beef Bakes
Prep Time 10 minutes

Ingredients
  

  • 3 duck eggs
  • ¼ cup milk
  • ½ cup grated tasty cheese

Instructions
 

  • Heat eggs until hot
  • Beat eggs in a bowl and whisk through hot milk and cook over low heat until a custard consistency
  • Gently stir in cheese
  • Pour over vegetables or seafood, or minced beef and vegetables.  Bake in moderately hot oven for 15 – 20 mins

Chocolate cream

Chocolate cream

Suitable  topping for  fresh or canned fruit. Layer sliced pears with chocolate cream in a parfait glasses mins  Chill for 15. Or spread chocolate cream on a waffle and top with fruit or berries. Or grill banana and top with chocolate cream

Ingredients
  

  • 130 g plain dark chocolate
  • 3 duck eggs

Instructions
 

  • Break chocolate into small pieces and put in a basin
  • Melt over a saucepan of hot water, remove from heat, whisk in the egg yolks and beat until thick and creamy
  • When cool, fold in stiffly beaten egg whites.  Store in sealed container in fridge

Seafood and egg bake

Ingredients
  

  • 5 duck eggs
  • 2 tbs water
  • 1 tsp dill
  • salt and pepper
  • 1 cup crab or lobster pieces
  • ½ prawns
  • 210 g can pink salmon drained and flaked
  • 1 large onion sliced
  • ½ green capsicum diced
  • 2 tbs olive oil
  • 2 tbs parmesan cheese
  • 1 tsp lemon or lime juice

Instructions
 

  • Fry onions and green pepper in hot oil in frypan
  • Remove half and reserve
  • Pour egg mix over onion and capsicum
  • When almost set, add salmon, reserved onions and capsicum, crab meat, lemon juice and prawns
  • Sprinkle with parmesan cheese.  Cook through for 1-2mins

Banana and oat pancakes

Ingredients
  

  • 2 very soft bananas
  • 2 duck eggs
  • ¼ cup cream
  • ¼ cup milk
  • 1 tsp vanilla extract
  • 1 cup quick oats
  • ½ tsp cinnamon and a pinch of nutmeg
  • 2 tsp baking powder
  • 2 tbs self raising flour
  • 1 tbs sugar and a pinch of salt

Instructions
 

  • Place all dry ingredients in a bowl. Stir to mix
  • Mix dry and wet ingredients together
  • Heat lightly greased  frying pan
  • Cook over medium heat
  • Store cooled pancakes two in  a freezer bag and freezer. Will store for several months

I use surplus duck eggs by making pancakes and storing them in the freezer

  • 1 cup self raising flour
  • 2 tbs oat bran
  • 1 tsp baking powder

Instructions
 

  • Place wet ingredients in a bowl and mix until blended
  • Place all dry ingredients in a bowl and stir until mixed
  • Mix dry and wet ingredients together
  • Heat lightly greased  frying pan
  • Cook over medium heat
  • Store cooled pancakes two in  a freezer bag and freezer. Will store for several months

Bacon and corn “one bowl” quiche

Ingredients
  

  • 3 duck eggs
  • ½ sour cream
  • 1 cup milk
  • 1 medium onion, chopped
  • 1 small red capsicum, diced
  • ½ corn kernels
  • 3 rashers rindless bacon, lighty cooked and chopped
  • ¾ cup Pastry Mix
  • 1 tsp dried mixed French herbs

Instructions
 

  • Place all ingredients in a mix bowl and mix well. Pour into greased, deep pie dish. Bak in moderately hot oven for 30 – 40 mins
    Note:  the mixture forms its own light crust.   The quiche is cooked when a knife comes out clean

Omelette with mushrooms

Ingredients
  

  • 2 duck eggs
  • 3 tsp cold water
  • salt and pepper
  • ½ tsp dried sage
  • 4 button mushrooms, sliced thickly
  • 1 tsp aioli
  • 1 tsp sour cream
  • 1 tsp water
  • 1 tsp bbq sauce
  • salt and pepper

Instructions
 

  • Lightly mix in a bowl, duck eggs, cold water, salt and pepper, dried sage
  • In a pan place butter, mushrooms, sliced thickly. Add aioli , sour cream, 1 tsp water, bbq sauce, salt and pepper. Saute over low heat until warmed through
  • Warm a greased frying pan, over medium heat.  Cook Omelette
  • Serve with mushroom topping
