Sweet potato roti

Ingredients
  

  • 700 g sweet potato peeled and coarsely grated
  • 1 small red onion grated
  • 2 cloves garlic crushed
  • 3 tbsp lemon oil
  • 4 tbsp plan four
  • ¼ tbsp smoke paprika
  • salt and pepper
  • 1 large egg
  • 3 tbsp peanut oil

Instructions
 

  • In a pan add one small grated red onion and two crushed cloves of garlic with lemon oil.  Cook gently 6mins until onions are softened
  • Cool
  • Add onion mix to sweet potatoes and toss to combine
  • Add plan flour,smoke paprika, salt and pepper
  • Stir
  • Fold in one large egg, beaten
  • In a large pan heat a few tbsp peanut oil and heat over medium heat.  Place heaped tbsp of mix into the pan and fry until cooked crispy

Sweet potatoes in curried coconut milk

SWEET POTATOES IN CURRIED COCONUT MILK

Ingredients
  

  • 600 g sweet potatoes peeled and cut into chunks
  • 2 cloves garlic
  • 1 tbsp green curry paste
  • pinch cinnamon
  • 1 tbsp honey
  • 1 lime
  • 400 ml coconut milk
  • 1 kaffir lime leaf
  • sugar and salt to taste
  • 1 tbsp chopped coriander or Thai basil

Instructions
 

  • Cook the sweet potatoes
  • Mix garlic with green curry paste, pinch cinnamon, honey and juice of one lime
  • Place in pan and cook for one minute
  • Stir in coconut milk and one kaffir lime leaf. Sugar and salt to taste
  • Cook over medium heat for about 10mins
  • Remove kaffir lime leaf
  • Stir in sweet potato and chopped coriander or Thai basil
  • Serve with hot rice

Sherry ginger sweet potatoes

Ingredients
  

  • 500 g steam or roasted sweet potato Cut into mouth size chunks
  • ¼ cup walnuts Lightly chop in a food processor
  • 1 tbsp lemon oil
  • ¼ cup sherry
  • 3 tbsp ginger marmalade
  • fresh black pepper and salt

Instructions
 

  • In saucepan add lemon oil, sherry, ginger marmalade and season with fresh black pepper and salt
  • Stir to combine. Cook over  low heat until sauce slightly thickens
  • Pour over warm sweet potatoes and gently toss to combine
  • Sprinkle with chopped walnuts
